Salmon Burgers
   
from Seafood Twice a Week

1 lb. salmon, skin removed
1/2 cup celery, finely chopped
1/2 cup dry bread crumbs
1/4 cup lite mayonnaise
1 egg, beaten
2 Tbsp. salsa
1 Tbsp. parsley, finely chopped
1 Tbsp. lemon juice
1/8 tsp. black pepper

Combine all ingredients.  Mix well. Form into 4 patties.  Spray non-stick pan with oil.  Grill until golden brown on both sides.  Serve on hamburger buns with lettuce, sliced tomatoes, pickles and dill mayonnaise.
