6 oz. Blue Cheese 2 lb. Salmon Fillet 1/4 lb. freshly ground pepper 14 cup beer 1/4 cup chopped walnuts 1/4 cup chopped fresh parsley
Freeze Blue Cheese twenty minutes (this will make it easier to slice). Cut into 1/4 inch thick slices. Heat grill or (oven to 350 degrees). Cut piece of foil several inches larger than the salmon and spray with nonstick cooking spray. Place salmon on foil. Make diagonal cuts in salmon every inch; cutting down almost to skin. Place cheese slices in slits. Sprinkle with pepper. Fold of 4 sides of foil to form sides. Place salmon with foil on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Pour beer over salmon. Grill 10 to 15 minutes or until salmon just begins to flake. Halfway through grilling, sprinkle with walnuts. Sprinkle with parsley just before serving.
