Low Country Boil
     

4 beers, cheap
2 bags of seafood boil
5 # shrimp, medium or large, your preference
10 ears corn cut into smaller pieces
2 # andouille sausage, chopped
5 # small new red/white potatoes
4 celery stalks, chopped
4 onions quartered
5 carrots, chopped.




In a large pot, add beer, seafood seasoning bags and enough water to cover all ingredients.  Add andouille sausage, potatoes, celery, carrots, onions and cook until tender.  Add corn, cook 10 minutes.  Add shrimp, cook until done.   Carefully remove seafood seasoning bags.  Dip out the goodies and serve on table covered with newspaper.  Serve with crusty bread, butter and plenty of napkins.
